Seriously?
I am diabetic and I keep my sugar under control with a low-carb diet (similar to KETO, but not as strict). Over the years I’ve found many sugar-free recipes, entrees, and desserts to make this easier.
Last year I thought I had found gold—a wheat wrap that was only 5 carbs, tasted great, and was big enough to hold a sandwich’s worth of filling. But every time I used one, my sugar soared. Clearly someone was fudging (you should excuse the expression) the facts. They had to go.
I searched for veggie wraps—made of, not filled with. I was already substituting cauliflower for potatoes in many ways and was satisfied with the results.
I found a place that made wraps out of just about every veggie I’d ever heard of, and a couple I hadn’t. I saved money if I bought three, which I did, because these low-carb options are pricey.
I picked zucchini for its mild flavor, cauliflower since it worked in other instances, and broccoli, because I liked it better than the other choices.
My first problem was that they were kept frozen, so they had to be heated in a skillet before using. Strike one.
I decided to try the pizza recipe. I browned both sides of the zucchini wrap in a skillet, then moved it to a flat pan, top with my favorites and bake. It had to cool to let everything firm up. Only it didn’t. Firm up, I mean. It was crumbly and I had to use a knife and fork. Strike two.
Next I tried a quesadilla with the cauliflower one. At least it only took the one skillet. I was hoping that folding it over the cheese would give it some body, but no. Same problem as above. Strike three.
They were both edible, but nothing I wanted to do again.
I’m left with the broccoli. I expect the flavor to be stronger so I’m going to do pizza again. I’ll think of it as a veggie pizza, which I like. And I’ll have a knife and fork ready.
I think this manufacturer got carried away when it included dessert recipes. I could make a dessert pizza by putting sweet toppings on the wrap and baking it. Or I could put one in the bottom of a pie pan, add pie filling and bake. Well sure, I could do this, but I’m not going to. These veggie wraps taste like veggies and therefore, are the antithesis of dessert.
The last recipe, which really takes the cake (there’s another one) is making a lava cake. And it’s so simple! Just heat the wrap in the pan, dump chocolate chips on half, then fold it over twice. Voilà! A slice of lava cake!
Seriously--are they for real?
